Dry rub and wet barbecue ribs are two different cooking techniques used to season and flavor ribs.
Dry rub ribs are seasoned with a mixture of spices and herbs, usually composed of salt, pepper, paprika, garlic powder, and other seasonings, that are rubbed onto the meat before cooking. The dry rub forms a crust on the ribs, which locks in the flavor and moisture. Dry rub ribs are typically cooked at low temperatures for several hours until the meat is tender and juicy.
Wet ribs, on the other hand, are coated with a sauce made from vinegar, tomato sauce, or other liquids, as well as seasonings and spices. Wet ribs are typically cooked for a shorter time than dry rub ribs, as the added liquid in the sauce helps to keep the meat moist and flavorful. Wet ribs are often brushed with sauce during the cooking process to enhance the flavor and create a sticky, caramelized crust.
Both dry rub and wet ribs are delicious and have their own unique flavor and texture. The choice between the two will often come down to personal preference and the style of barbecue you're trying to achieve.
